For extract, I used raspberry but vanilla, lemon, orange, or pretty much any other flavor that goes good with honey would taste good. If you don't have a cookie scoop, you should chill the dough for a couple of hours and roll walnut sized balls.
Ingredients:
3/4 cup butter
2 cups white sugar
1 egg
2 tablespoons honey
1 teaspoon extract (your choice)
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 cup of sugar to roll dough in
Directions:
1. In a medium bowl, cream together butter and 2 cups of sugar until light and fluffy. Beat in egg, honey, and extract. Stir in flour, baking soda, and baking powder.
2. Preheat oven to 325 degrees F (165 degrees C). Use a small cookie scoop and plop dough into sugar to coat., and place on cookie sheet. (use a non stick sheet or parchment paper)
3. Bake 12 minutes in the preheated oven, or until lightly browned.
