| | Subject: Italian Grilled chicken breast w/ pasta salad | Posted: April 15, 2009 @ 8:10 AM | | Okay this meal is so simple and quick, not too many items are made from scratch in this recipe but if you want to take your time then you can substitute the items with your own homade/from scratch items instead, like the dressing and the italian seasoning.
4 trimmed boneless chicken breasts
Italian seasoning
For pasta salad
2 cups of elbow noodles
2 roman tomatos cubed
1/2 cucumber cubed
or
1 avacado cubed (which ever of the two you like to use, I've used both and they both taste good in the salad)
1/2 cup of feta or mozzerella cheese crumbled (which ever you like)
1 bottle of Wishbone Italian fat-free salad dressing
How to prepare
In a medium clear bowl combine tomatoes, avacado or cucumber, mozzerella or feta cheese, and dressing an hour ahead with dressing to marinate the flavors together, chill in fridge for an hour before the chicken is prepared. After the mixture has chilled for an hour,cook elbow noodles until tender drail, rinse with cold water to cool. Take chicken breasts season on both sides and place on grill. Cook all 4 chicken breasts on both sides until the chicken breasts are cooked throughly.
Slice chicken breats diagonally, and set them up on a platter. Take chilled mixture and combine with the cooled pasta, and top chicken with the mixture.
